TROUT AMANDINE

 

SERVES:  4 

1/4 Pounds rainbow trout fillets, butterflied    1/4 Cup almonds, sliced
1/4 Cup fresh parsley, choppedlemon slices for garnish

1Wash trout and pat dry with paper towels.  Preheat broiler, rub trout with lemon juice, place on broiler pan and broil 3-4 minutes per side.

2Remove from oven and sprinkle with almond slices.  Return to broiler, to brown almonds (watch carefully as they burn easily).

3.  Remove and serve with chopped parsley and lemon slices.
