CARROT CASSEROLE RING

 

3 tablespoons. tapioca

1 1/2 cup milk

1 cup grated sharp cheese

3 eggs, beaten

1/2 tablespoon salt

pinch of garlic powder

1 cup cooked mashed carrots


    Soak tapioca in milk for 10 minutes.  Cook over low heat until thickened, stirring constantly.

    Add cheese, stirring until melted. Cool.

    Add eggs, salt and garlic powder.

    Stir in mashed carrots.

    Turn into a well greased ring mold.

    Bake at 350 degrees for 45 minutes.

 

 

SERVES 6 - 8
