3-4 pound beef tenderloin | 3
tablespoons soy sauce | | 2
teaspoons dry mustard | 11/2
tablespoons butter | | 1/8
teaspoon salt | 1
cup dry sherry |
Trim the excess fat from the tenderloin and place in a large shallow baking pain.
Bake in a 400 degree oven for 10 minutes.
Add all ingredients and bring to a boil. Pour the mixture over the tenderloin.
Reduce the oven temperature to 325 degrees and bake for 35 minutes, or until a meat
thermometer reaches 150 degrees to 170 degrees. Baste often with the drippings.
Serve the tenderloin with the remaining drippings.
