SWEET POTATO-ORANGE CASSEROLE

 

6 medium, sweet potatoes2 Oranges

1 cup dark brown sugar

1 tbsp. cornstarch

1/4 cup butter

 

    Partially cook sweet potatoes; cool and peel.

    Cut into halves or quarters.

    Arrange potatoes and thin slices of 1 orange in buttered casserole.

    Boil juice of 1 orange, brown sugar, cornstarch and butter.

    Pour syrup over potatoes.

    Bake at 325 degrees for 1 hour.
